  • 2 cups Carrots
  • 1 cup Bell Pepper
  • 1 medium Red Onion
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Ground Black Pepper
  • 3 cloves Garlic
  • 1 teaspoon Crushed Red Pepper Flakes
  • 1 cup Sun-Dried Tomatoes (in oil)
  • 1 cup Heavy Cream
  • 1 cup Vegetable Broth
  • ½ cup Parmesan Cheese
  • 1 tablespoon Italian Herb Blend
  • 1 tablespoon Balsamic Vinegar
  • ¼ cup Fresh Basil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cauliflower, carrots, bell pepper, and red onion in a large bowl with olive oil, salt, and pepper.
  3. Roast the vegetable mixture on a baking sheet for 25 minutes, stirring halfway through.
  4. Heat a separate pan over medium heat and sauté garlic and crushed red pepper flakes in melted butter or olive oil until fragrant.
  5. Stir in the sun-dried tomatoes and then add heavy cream and vegetable broth. Let it simmer for 3 minutes.
  6. Incorporate the Parmesan cheese, Italian herbs, and balsamic vinegar into the sauce and stir until creamy and smooth.
  7. Combine the roasted vegetables with the creamy sauce in your pan and simmer for an additional 2 minutes.
  8. Add fresh basil just before serving.

Notes

  • Consider using broccoli for a similar effect to cauliflower.
  • Swap carrots for parsnips for a unique flavor.
  • Substitute yellow onion for a milder taste.
  • Adjust salt and pepper to suit your taste preferences.
  • Use non-dairy alternatives for a vegan version.
  • Chicken broth can replace vegetable broth for non-vegetarians.
  • Use nutritional yeast for a dairy-free option.
  • Fresh herbs can replace dried ones for a burst of freshness.
