  • 4 cups Chicken Broth (Use vegetable broth for a vegetarian version.)
  • 0.5 cup All-Purpose Flour (Can substitute with cornstarch for gluten-free.)
  • 2 cups Milk (Whole milk or plant-based for lighter texture.)
  • 1 cup Sharp Cheddar Cheese (shredded) (Substitute with gouda for a smoky flavor.)
  • 0.5 cup Sour Cream (Greek yogurt can be a healthier substitute.)

Instructions

  1. Brown the Beef: Heat a large stock pot over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
  2. Cook Vegetables: In the same pot, melt 1 tablespoon of butter. Add the yellow onion, shredded carrots, diced celery, Italian seasoning, salt, and pepper. Sauté until tender, about 3-5 minutes.
  3. Boil the Soup: Incorporate the browned beef, quartered petite red potatoes, and chicken broth. Bring to a gentle boil, cover, and simmer for 10-12 minutes until the potatoes are tender.
