Instructions
- In a large chilled bowl, blend the ground beef, ground lamb, minced garlic, salt, black pepper, and whisk in the baking soda along with the sparkling mineral water.
- Knead the mixture by hand for about 5 minutes until it feels tacky and slightly pale.
- Cover the bowl tightly with plastic wrap and refrigerate for at least 12 hours.
- With wet hands, shape the meat mixture into cylinders about 3 inches long and ¾ inch thick.
- Grill them over medium-high heat for about 10 minutes, turning frequently until cooked through.
- Let the cevapi sit for 2 minutes to allow the juices to settle.
