Ingredients

  • 1 lb Ground Lamb (Distinct richness to flavor)
  • 4 cloves Garlic (Minced; boiling enhances flavor)
  • 1 tsp Salt (Enhances overall flavor; adjust as needed)
  • 1 tsp Black Pepper (Freshly cracked for better flavor)
  • 1/2 cup Sparkling Mineral Water (Creates a springy texture)
  • 1 tsp Baking Soda (Crucial for achieving bounce in cevapi)

Instructions

  1. In a large chilled bowl, blend the ground beef, ground lamb, minced garlic, salt, black pepper, and whisk in the baking soda along with the sparkling mineral water.
  2. Knead the mixture by hand for about 5 minutes until it feels tacky and slightly pale.
  3. Cover the bowl tightly with plastic wrap and refrigerate for at least 12 hours.
  4. With wet hands, shape the meat mixture into cylinders about 3 inches long and ¾ inch thick.
  5. Grill them over medium-high heat for about 10 minutes, turning frequently until cooked through.
  6. Let the cevapi sit for 2 minutes to allow the juices to settle.
