Instructions
- Peel and shred the carrots and apple.
- Dice the celery if using.
- In a small bowl, whisk together yogurt, honey, lemon juice, parsley, salt, and pepper for the dressing.
- In a large bowl, combine shredded carrots, apple, and celery.
- Pour dressing over salad and toss to coat.
- Cover and refrigerate for at least 1 hour.
