Ingredients

  • 1.5 cups granulated sugar
  • 0.5 cups water
  • 0.25 teaspoon kosher salt
  • 0.75 cups heavy cream
  • 1 tablespoon cold unsalted butter
  • 6 oz dark chocolate chips
  • 1 tablespoon oil
  • 6 medium apples
  • 0.5 cups chopped nuts

Instructions

  1. In a medium pot, add the granulated sugar, water, and kosher salt over high heat. Stir gently and cook for 5-6 minutes until the sugar melts and turns a light caramel color.
  2. Carefully remove the pot from the heat. Pour in the heavy cream—watch out, as the caramel will bubble up! Return the pot to low heat, and stir constantly until the mixture becomes smooth and combined.
  3. Turn off the heat and stir in the cold unsalted butter until it’s fully melted and smooth. Pour the caramel into a tall measuring cup or wide container to make dipping easier.
  4. In a microwave-safe bowl, combine dark chocolate chips and oil. Microwave for 30 seconds, then stir. Repeat until the chocolate is fully melted and silky smooth.
  5. While the caramel cools, wash your apples and slice them lengthwise into wedges. Toss the slices in a medium bowl with lemon juice to prevent browning and enhance their flavor.
  6. Pat the apple slices dry with paper towels—this step is important for ensuring the caramel sticks perfectly.
  7. If using sticks, insert them into the apple slices. Dip each slice into the caramel, allowing any excess to drip off before placing them on a parchment-lined baking sheet.
  8. If desired, sprinkle chopped nuts on top of the dipped apples. You can also drizzle them with melted chocolate for an indulgent finish. Enjoy immediately or refrigerate uncovered until ready to serve.
