Ingredients

  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 2 tablespoons basil pesto
  • 5 cloves garlic
  • kosher salt to taste
  • black pepper to taste
  • 1 cup sour cream
  • 1/2 cup fresh chopped basil
  • 8 ounces low-moisture mozzarella cheese
  • 8 ounces shredded provolone cheese
  • 1/4 cup freshly grated parmesan cheese
  • crusty bread, crackers, or tortilla chips

Instructions

  1. Preheat your oven to 400°F and adjust the oven rack to the middle position.
  2. Add 1 cup of whole cherry tomatoes to the bottom of a 2-quart baking dish or cast iron skillet.
  3. Drizzle with olive oil and top with basil pesto, minced garlic, and kosher salt and black pepper to taste.
  4. Toss to coat the tomatoes thoroughly, ensuring every little one is embraced by the delicious oil and seasoning.
  5. Bake for 15 minutes, watching as the tomatoes blister and begin to caramelize.
  6. Mix in the sour cream and sprinkle the shredded mozzarella and provolone cheese evenly over the roasted tomatoes.
  7. Return to the oven and bake for an additional 5 minutes, or until the cheeses are melty and golden.
  8. Optional: Garnish with extra fresh basil before serving.
