- 8 ounces shredded provolone cheese
- 1/4 cup freshly grated parmesan cheese
- crusty bread, crackers, or tortilla chips
Instructions
- Preheat your oven to 400°F and adjust the oven rack to the middle position.
- Add 1 cup of whole cherry tomatoes to the bottom of a 2-quart baking dish or cast iron skillet.
- Drizzle with olive oil and top with basil pesto, minced garlic, and kosher salt and black pepper to taste.
- Toss to coat the tomatoes thoroughly, ensuring every little one is embraced by the delicious oil and seasoning.
- Bake for 15 minutes, watching as the tomatoes blister and begin to caramelize.
- Mix in the sour cream and sprinkle the shredded mozzarella and provolone cheese evenly over the roasted tomatoes.
- Return to the oven and bake for an additional 5 minutes, or until the cheeses are melty and golden.
- Optional: Garnish with extra fresh basil before serving.
