Description

A simple and flavorful one-pan meal featuring Cajun-spiced chicken and colorful bell peppers, perfect for busy weeknights.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 medium red bell pepper, sliced
  • 1 medium yellow bell pepper, sliced
  • 1 medium orange bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the chicken pieces with Cajun seasoning, salt, and pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Add the seasoned chicken to the skillet and cook until browned on all sides, about 5-7 minutes.
  5. Add the sliced bell peppers and onion to the skillet with the chicken. Cook for 5 minutes, stirring occasionally, until the vegetables begin to soften.
  6. Stir in the minced garlic and cook for 1 minute more until fragrant.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the vegetables are tender-crisp.
  8. Serve your Cajun chicken bell peppers hot.

  • For a spicier dish, add a pinch of cayenne pepper to the Cajun seasoning.
