- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 medium red bell pepper, sliced
- 1 medium yellow bell pepper, sliced
- 1 medium orange bell pepper, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the chicken pieces with Cajun seasoning, salt, and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Add the seasoned chicken to the skillet and cook until browned on all sides, about 5-7 minutes.
- Add the sliced bell peppers and onion to the skillet with the chicken. Cook for 5 minutes, stirring occasionally, until the vegetables begin to soften.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the vegetables are tender-crisp.
- Serve your Cajun chicken bell peppers hot.
Notes
- For a spicier dish, add a pinch of cayenne pepper to the Cajun seasoning.
