  • 2 tablespoons Fresh Lemon Juice
  • 2 tablespoons Corn Starch
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Turmeric
  • 1 teaspoon Garam Masala
  • 1 teaspoon Salt
  • 2 tablespoons Olive Oil
  • 2 tablespoons Unsalted Butter
  • 1 small Yellow Onion
  • 3 cloves Garlic Cloves
  • 1 tablespoon Freshly Grated Ginger
  • 1 tablespoon Tomato Paste
  • 1 teaspoon Paprika
  • 1/2 teaspoon Ground Cinnamon
  • 1/4 teaspoon Cayenne Pepper
  • 1 cup Canned Tomato Sauce
  • 1 cup Vegetable Broth
  • 1/2 cup Heavy Cream
  • 2 cups Basmati Rice
  • 1/4 cup Fresh Cilantro
  • 1/2 cup Greek Yogurt

Instructions

  1. In a mixing bowl, combine fresh lemon juice, corn starch, ground cumin, and a portion of ground turmeric, garam masala, and salt. Toss the cauliflower florets in this mixture until well-coated.
  2. Heat olive oil in a skillet over medium-high heat. Add the cauliflower and cook for about 8 minutes until it’s nicely browned. Once cooked, transfer it to a bowl and set aside.
  3. In the same skillet, reduce the heat and add unsalted butter and yellow onion. Cook for around 8 minutes until the onions are translucent. Stir in minced garlic, freshly grated ginger, and tomato paste; cook for an additional 2 minutes.
  4. Add the remaining ground turmeric, garam masala, salt, paprika, ground cinnamon, and cayenne pepper to the skillet. Cook for about 1 minute to enhance the spices, then pour in the canned tomato sauce and vegetable broth. Bring to a boil, then reduce the heat and let it simmer.
  5. After the sauce has thickened (approximately 15 minutes), stir in the heavy cream and return the sautéed cauliflower to the skillet. Gently mix until everything is combined and heated through.
