- 4 ounces Fresh Mozzarella (Slice thinly and pat dry)
- 2 tablespoons Parmesan (Use freshly grated for best taste)

- 1 cup Fresh Tomatoes (Dice and pat dry)
- 1/4 cup Red Onion (Finely diced)
- 1/4 cup Fresh Basil (Finely chopped)
- 1 clove Garlic (Rub on cooked bread)
- 1 tablespoon Balsamic Glaze (Optional drizzle)
Instructions
- Prepare the Bruschetta Topping: Press diced tomatoes with paper towels to absorb moisture. Combine with finely diced red onion, basil, olive oil, salt, and pepper in a bowl.
- Prep the Bread: Brush one side of ciabatta slices with olive oil. Layer half with mozzarella, bruschetta mixture, and Parmesan; top with remaining slices, oil-side up.
- Cook the Sandwiches: Heat a pan over medium heat. Place sandwiches and cook until golden, about 3-4 minutes. Flip, rub garlic on cooked side, and cook until golden on the other side.
- Serve: Transfer sandwiches to a board with garlic-side down, rub the other side with garlic. Drizzle with balsamic glaze before serving.
