  • 3 medium Mashed Ripe Bananas
  • 2 large Eggs, room temperature
  • 1/2 cup Yogurt (vanilla/plain)
  • 1 teaspoon Vanilla Extract
  • 1 cup Fresh Blueberries
  • Cooking Spray

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, and kosher salt.
  3. In a larger bowl, cream the granulated sugar and softened butter until fluffy.
  4. Add the mashed ripe bananas, eggs, yogurt, and vanilla extract to the butter mixture. Mix until well blended.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Toss the fresh blueberries with 1 tablespoon of flour to prevent them from sinking, then gently fold them into the batter.
  7. Pour the batter into a greased 8.5 x 4.5-inch loaf pan, smoothing the top.
  8. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
