Decadent Bananas Foster Cheesecake Perfect for Any Celebration


Ingredients

  • 1 cup Graham Crackers
  • 5 tablespoons Unsalted Butter
  • 16 ounces Philadelphia Cream Cheese
  • 3/4 cups Granulated Sugar
  • 3/4 cups Brown Sugar
  • 3 large Eggs
  • 1 cup Heavy Cream
  • 4 medium Bananas
  • 1/4 cup Dark Rum
  • 1 teaspoon Cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine crushed graham crackers with melted unsalted butter until the mixture resembles wet sand. Firmly press this into the bottom of a springform pan.
  2. Place the prepared crust in the preheated oven and bake for about 10 minutes, or until it is lightly golden. Keep a close eye on it to avoid burning.
  3. In a separate large bowl, beat the Philadelphia cream cheese until it’s smooth and creamy. Gradually add both types of sugar, mixing well after each addition. Incorporate the eggs one at a time, followed by the heavy cream, mixing gently until just combined.
  4. In a saucepan, melt some unsalted butter over medium heat. Add the sliced ripe bananas along with brown sugar and cinnamon. Cook until the bananas are beautifully caramelized and tender.
  5. Carefully pour in the dark rum over the caramelized bananas, allowing it to bubble and release its lovely aroma. Once bubbly, remove from heat and set aside to cool slightly.
  6. Once your crust has cooled slightly, pour the cheesecake batter into the crust. Spoon the caramelized banana topping over the cheesecake mixture. Then, chill in the fridge for at least four hours or overnight for best results.
