- 1/2 cup granulated sugar
- 1 count egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup dulce de leche or caramel spread
- powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and granulated sugar in a medium bowl until light and fluffy.
- Add the egg and vanilla extract, beating until well combined.
- Gradually incorporate the flour and salt into the mixture, mixing until a dough forms.
- Roll the dough into 1-inch balls and arrange them about 2 inches apart on the prepared baking sheet.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Cool the cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Spread a teaspoon of dulce de leche on the flat side of one cookie, and top it with another to create a sandwich.
- Dust your Andalusian Alfajores with powdered sugar before serving.
