Description

Andalusian Alfajores are delightful cookies filled with rich dulce de leche, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 count egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup dulce de leche or caramel spread
  • powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and granulated sugar in a medium bowl until light and fluffy.
  3. Add the egg and vanilla extract, beating until well combined.
  4. Gradually incorporate the flour and salt into the mixture, mixing until a dough forms.
  5. Roll the dough into 1-inch balls and arrange them about 2 inches apart on the prepared baking sheet.
  6. Bake for 10-12 minutes or until the edges are lightly golden.
  7. Cool the cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  8. Spread a teaspoon of dulce de leche on the flat side of one cookie, and top it with another to create a sandwich.
  9. Dust your Andalusian Alfajores with powdered sugar before serving.
