- 2 cups Fresh Blueberries
- 1/4 cup Granulated Sugar
- 1/4 cup Water
- 4 cups Low Fat Plain Greek Yogurt
- 1 cup Cinnamon Granola
Instructions
- In a small saucepan, combine blueberries, granulated sugar, and water. Bring to a gentle simmer over medium heat for about 5-8 minutes until the blueberries burst and thicken into a compote.
- Once the compote has reached the desired consistency, remove it from heat and allow it to chill in the refrigerator.
- To assemble, add 1/3 cup of Greek yogurt to each cup for the creamy base.
- Layer 2 tablespoons of the chilled blueberry compote on top of the yogurt, followed by 2 tablespoons of cinnamon granola.
- Repeat the layering process once more and finish each parfait with an extra tablespoon of blueberries.
