Ingredients

Scale
  • 4 large Eggs
  • 2 medium Avocados
  • 1/2 cup Red Onion
  • 1 cup Cherry Tomatoes
  • 1/4 cup Cilantro
  • 2 tablespoons Lime Juice
  • 3 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1/2 teaspoon Red Pepper Flakes

Instructions

  1. Place eggs in a pot, covering them with cold water. Bring to a gentle boil over medium-high heat for about 5-7 minutes.
  2. Once boiling, cover the pot and remove it from heat. Let the eggs sit for 10-12 minutes.
  3. While the eggs are cooking, mash ripe avocados in a bowl, leaving some chunks.
  4. Mix in chopped red onion, halved cherry tomatoes, and cilantro with the mashed avocados. Drizzle with lime juice and olive oil, then toss gently.
  5. Cool the eggs in ice water for 5 minutes. Peel and chop them into bite-sized pieces.
  6. Gently fold the chopped eggs into the avocado mixture, season with salt, pepper, and red pepper flakes.
