Description

Ultimate Party Pasta Salad That’s Perfect for Any Gathering

Ingredients

Scale
  • 1 lb Short-Cut Pasta (Use gluten-free pasta for gluten-free options.)
  • 1 large head Romaine Lettuce (Chopped; substitute with spinach or mixed greens if desired.)
  • 1 head Radicchio (Shredded; red cabbage works as a great swap.)
  • 6 oz Spicy Salami (Sliced; turkey salami or no meat keeps it vegetarian.)
  • 3 oz Pepperoni (Sliced; consider plant-based pepperoni for a vegan touch.)
  • 3 oz Prosciutto (Sliced; sautéed mushrooms can serve as a vegetarian alternative.)
  • 2 cups Cherry Tomatoes (Halved; for variety, swap with diced bell peppers or cucumbers.)
  • 1 cup Mixed Pitted Olives (Sliced; include your favorite olives or omit entirely.)
  • 1 Red Bell Pepper (Diced; yellow or orange bell peppers can be used instead.)
  • ½ cup Pepperoncini (Sliced; banana peppers are a milder substitute.)
  • 1 cup Fresh Basil Leaves (Torn; parsley or cilantro work well as alternatives.)
  • 1 cup Mini Mozzarella Balls (Brings creamy texture; use cubed dairy-free cheese for a vegan version.)
  • 1 cup Provolone Cheese (Cubed; aged cheddar can be a flavorful swap.)
  • ½ cup Shaved Parmesan Cheese (A finishing touch for creaminess; can be omitted for vegan dishes.)
  • ½ cup Olive Oil (Serves as a base for dressing; avocado oil is a great substitute.)
  • ¼ cup Champagne Vinegar (Or red-wine vinegar; apple cider vinegar works as well.)
  • 2 Tbsp Lemon Juice (Adds brightness; lime juice gives a zesty alternative.)
  • 2 tsp Dijon Mustard (Contributes depth to the dressing; honey mustard offers sweetness.)
  • 1 Tbsp Fig Preserves (Or honey; adds a touch of sweetness.)
  • 1 Shallot (Finely chopped; red onion is an easy substitute.)
  • 2 cloves Garlic (Grated; minced garlic is a perfect alternative.)
  • ½ cup Fresh Herbs (Basil, oregano, dill; feel free to personalize with your favorites.)
  • Salt, Pepper, Chili Flakes (Customize seasoning to taste.)

Instructions

  1. Make the Dressing: In a jar, combine olive oil, champagne vinegar, lemon juice, Dijon mustard, fig preserves, chopped shallot, grated garlic, and fresh herbs. Shake or whisk until well blended.
  2. Cook the Pasta: Bring a pot of salted water to a boil. Cook the short-cut pasta according to package directions until al dente, then drain and return it to the pot.
  3. Dress the Pasta: While the pasta is still warm, pour the dressing over it and toss gently to ensure every piece is coated.
  4. Combine Ingredients: In a large bowl, mix in chopped romaine lettuce, shredded radicchio, spicy salami, pepperoni, prosciutto, cherry tomatoes, sliced olives, diced red bell pepper, sliced pepperoncini, torn basil leaves, and the mozzarella and provolone cheese.
  5. Taste and Adjust: Season your vibrant salad with salt, pepper, and chili flakes to your liking. For the best flavor, serve immediately or refrigerate for a couple of hours to enhance the taste.
