Easy Turkey Rissoles are a quick and satisfying meal packed with protein and fresh vegetables.

- 500 grams Turkey Mince
- 1 medium White Onion
- 2 cloves Garlic
- 1 medium Zucchini
- 1 stick Celery
- 100 grams Breadcrumbs
- 2 large Egg Yolks
- 1 tablespoon Thyme Leaves
- 1 tablespoon Sage Leaves
- 1 tablespoon Parsley
- to taste Salt
- to taste Black Pepper
- 2 tablespoons Olive Oil
Instructions
- Preheat the oven to 180°C (360°F) and line a baking tray with parchment paper.
- Grate the onion and zucchini, and finely dice the celery and herbs.
- In a large bowl, mix all the ingredients (excluding olive oil) together until well combined.
- Wet your hands and shape approximately 2 tablespoons of mixture into patties, aiming for 8-9 rissoles.
- Heat olive oil in a skillet over medium heat and fry the patties for about 3-4 minutes per side.
- Transfer the fried patties to the lined tray and bake for 10-12 minutes or until the internal temperature reaches 165°F.
- Serve the rissoles with your favorite sides or as an appetizer.
Notes
- For a fresher option, use minced turkey breast.
- Substitute white onion with red onion for a sharper flavor.
- Grated carrot can be used instead of zucchini.
- For gluten-free option, use gluten-free bread for breadcrumbs.
- Fresh herbs are preferred; dried can be used in smaller amounts.
