Description

Easy Turkey Rissoles are a quick and satisfying meal packed with protein and fresh vegetables.


Ingredients

Scale
  • 500 grams Turkey Mince
  • 1 medium White Onion
  • 2 cloves Garlic
  • 1 medium Zucchini
  • 1 stick Celery
  • 100 grams Breadcrumbs
  • 2 large Egg Yolks
  • 1 tablespoon Thyme Leaves
  • 1 tablespoon Sage Leaves
  • 1 tablespoon Parsley
  • to taste Salt
  • to taste Black Pepper
  • 2 tablespoons Olive Oil

Instructions

  1. Preheat the oven to 180°C (360°F) and line a baking tray with parchment paper.
  2. Grate the onion and zucchini, and finely dice the celery and herbs.
  3. In a large bowl, mix all the ingredients (excluding olive oil) together until well combined.
  4. Wet your hands and shape approximately 2 tablespoons of mixture into patties, aiming for 8-9 rissoles.
  5. Heat olive oil in a skillet over medium heat and fry the patties for about 3-4 minutes per side.
  6. Transfer the fried patties to the lined tray and bake for 10-12 minutes or until the internal temperature reaches 165°F.
  7. Serve the rissoles with your favorite sides or as an appetizer.

Notes

  • For a fresher option, use minced turkey breast.
  • Substitute white onion with red onion for a sharper flavor.
  • Grated carrot can be used instead of zucchini.
  • For gluten-free option, use gluten-free bread for breadcrumbs.
  • Fresh herbs are preferred; dried can be used in smaller amounts.
