Delightful Taro Snow Skin Mooncakes You Can Easily Make


Ingredients

Scale
  • 1 cup Taro (or sweet potato)
  • 1/2 cup Granulated sugar (adjust to taste)
  • 1 tablespoon Cornstarch
  • 2 tablespoons Vegetable oil
  • 1/2 cup Coconut milk (or whole milk)
  • 1 cup Glutinous rice flour
  • 1/4 cup Rice flour
  • 1/4 cup Wheat starch or cornstarch
  • 1/4 cup White sugar
  • 1/2 cup Coconut milk or whole milk
  • 1 teaspoon Purple gel food coloring (optional)
  • 1/4 cup Cornstarch for dusting

Instructions

  1. Steam Taro: Place the taro cubes in a steamer basket and steam them for about 20 minutes until soft.
  2. Mix Filling: Combine steamed taro with granulated sugar, cornstarch, vegetable oil, and coconut milk. Mix until smooth.
  3. Prepare Dough: Whisk together glutinous rice flour, rice flour, wheat starch, and white sugar.
  4. Add Wet Ingredients: Gradually incorporate coconut milk and vegetable oil into the dry ingredients until a soft dough forms.
  5. Add Color: Knead in purple gel food coloring if desired.
  6. Portion Ingredients: Divide the filling and dough into equal small portions.
  7. Shape Mooncakes: Flatten dough, place filling in the center, wrap the dough and dust with cornstarch.
  8. Chill: Refrigerate the shaped mooncakes for at least 30 minutes before serving.
