- 4 fillets salmon (about 6 oz each)
- 1/2 cup cream cheese (softened)
- 1/4 cup cooked spinach (drained and chopped)
- 2 tablespoons fresh dill (chopped)
- 1 tablespoon lemon zest
- 1 tablespoon Dijon mustard
- 2 teaspoons garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- lemon wedges (for serving)
Instructions
- Preheat your oven to 375°F (190°C).
- Mix the cream cheese, cooked spinach, dill, lemon zest, Dijon mustard, garlic powder, salt, and black pepper in a small bowl until smooth.
- Prepare the salmon by laying the fillets flat on a cutting board. Carefully cut a small pocket in each fillet.
- Stuff each fillet with the cream cheese mixture.
- Roll the fillets up to create pinwheels.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the salmon pinwheels for 2-3 minutes on each side until golden brown.
- Transfer the skillet to the oven and bake for 10-12 minutes, or until cooked through.
- Serve with lemon wedges for extra freshness.
