Mouthwatering Stuffed Salmon Pinwheels for Quick Dinners


Ingredients

  • 4 fillets salmon (about 6 oz each)
  • 1/2 cup cream cheese (softened)
  • 1/4 cup cooked spinach (drained and chopped)
  • 2 tablespoons fresh dill (chopped)
  • 1 tablespoon lemon zest
  • 1 tablespoon Dijon mustard
  • 2 teaspoons garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • lemon wedges (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix the cream cheese, cooked spinach, dill, lemon zest, Dijon mustard, garlic powder, salt, and black pepper in a small bowl until smooth.
  3. Prepare the salmon by laying the fillets flat on a cutting board. Carefully cut a small pocket in each fillet.
  4. Stuff each fillet with the cream cheese mixture.
  5. Roll the fillets up to create pinwheels.
  6. Heat olive oil in an oven-safe skillet over medium-high heat.
  7. Sear the salmon pinwheels for 2-3 minutes on each side until golden brown.
  8. Transfer the skillet to the oven and bake for 10-12 minutes, or until cooked through.
  9. Serve with lemon wedges for extra freshness.
