Description

  • 1 can Canned crushed tomatoes
  • 1 tablespoon Sesame oil
  • 2 tablespoons Soy sauce
  • 1 teaspoon Brown sugar
  • 4 cups Stock (chicken or vegetable)
  • 1 cup Heavy cream
  • 12 ounces Cheese tortellini
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • Fresh chives, for garnish

Instructions

  1. In a pot, heat a drizzle of oil. Fry the chopped onion until soft.
  2. Stir in the minced garlic and cook for 30 seconds until fragrant. Add the gochujang and cook for another minute.
  3. Add the canned crushed tomatoes, stock, soy sauce, sesame oil, and brown sugar. Stir well and bring to a gentle simmer. Cook for 10 minutes, stirring occasionally.
  4. Blend the soup until smooth using a stand or hand blender.
  5. Add the cheese tortellini and cook according to package instructions, typically 3–5 minutes, until tender.
  6. Stir in the heavy cream.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh chives if desired.
