- 1/4 cup Green Onions (chopped)
Instructions
- Begin by peeling and dicing the potatoes. Chop the onion, mince the garlic, and remove the kernels from the fresh corn.
- In your slow cooker, add the diced potatoes, fresh corn, onion, minced garlic, and broth. Season with salt, pepper, smoked paprika, and thyme. Stir to combine.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until potatoes are tender.
- In a small saucepan, melt the butter and stir in the flour for a minute. Gradually add the milk and heavy cream, stirring until thickened. Pour into the slow cooker and stir to combine.
- Optional: Stir in cheddar cheese until melted.
- Ladle the chowder into bowls and garnish with turkey bacon, fresh parsley, or green onions.
