  • 1 teaspoon Smoked Paprika (optional)
  • 1 teaspoon Thyme (dried or fresh)
  • 2 tablespoons Butter (or olive oil for dairy-free)
  • 1/4 cup Flour (or gluten-free flour)
  • 1 cup Milk (or dairy alternative)
  • 1/2 cup Heavy Cream (or dairy alternative)
  • 1 cup Cheddar Cheese (shredded)
  • 4 slices Turkey Bacon (optional)
  • 1/4 cup Fresh Parsley (chopped)
  • 1/4 cup Green Onions (chopped)

Instructions

  1. Begin by peeling and dicing the potatoes. Chop the onion, mince the garlic, and remove the kernels from the fresh corn.
  2. In your slow cooker, add the diced potatoes, fresh corn, onion, minced garlic, and broth. Season with salt, pepper, smoked paprika, and thyme. Stir to combine.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours until potatoes are tender.
  4. In a small saucepan, melt the butter and stir in the flour for a minute. Gradually add the milk and heavy cream, stirring until thickened. Pour into the slow cooker and stir to combine.
  5. Optional: Stir in cheddar cheese until melted.
  6. Ladle the chowder into bowls and garnish with turkey bacon, fresh parsley, or green onions.
