Ingredients

- 1 medium savoy cabbage, thinly sliced
- 1 1/2 cups cooked chickpeas
- 1/4 small red onion, thinly sliced
- Zest of 1 lemon
- 2 tbsp lemon juice
- 1/4 cup olive oil
- 1 tsp Dijon mustard
- Salt to taste
- Black pepper to taste
- 2–3 tbsp fresh dill, chopped
Instructions
- Slice cabbage and place in large bowl.
- Massage with salt to soften.
- Add chickpeas and onion.
- Whisk dressing ingredients.
- Pour dressing over salad and toss.
- Add herbs and adjust seasoning.
- Rest briefly and serve.
