Savoy Cabbage Chickpea Salad That’s Fresh, Crunchy, and Deeply Satisfying


Ingredients

  • 1 medium savoy cabbage, thinly sliced
  • 1 1/2 cups cooked chickpeas
  • 1/4 small red onion, thinly sliced
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • 1/4 cup olive oil
  • 1 tsp Dijon mustard
  • Salt to taste
  • Black pepper to taste
  • 23 tbsp fresh dill, chopped

Instructions

  1. Slice cabbage and place in large bowl.
  2. Massage with salt to soften.
  3. Add chickpeas and onion.
  4. Whisk dressing ingredients.
  5. Pour dressing over salad and toss.
  6. Add herbs and adjust seasoning.
  7. Rest briefly and serve.
