- 1 cup cottage cheese
- 1 cup all-purpose flour
- 1/2 cup grated cheese (cheddar or feta)
- 1/4 cup chopped green onions
- 1/2 tsp baking powder
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup olive oil
- 1 lb ground chicken
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp ground fennel seeds, toasted
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 tsp crushed pepper flakes
Instructions
- Preheat oven to 375°F (190°C).
- Prepare muffin tin with baking paper or spray.
- Mix flour, baking powder, garlic powder, and salt in a bowl.
- In another bowl, beat eggs and mix with cottage cheese, olive oil, and green onions.
- Combine wet and dry ingredients, stirring until mixed.
- Fold in grated cheese.
- Spoon batter into muffin tin, filling each cup 2/3 full.
- Bake for 20-25 minutes until golden brown.
- Cool in the tin for 5 minutes before transferring to a wire rack.
