Sausage, Egg, and Cheese Breakfast Roll-Ups are a portable and satisfying breakfast. They feature scrambled eggs, sausage, and cheese wrapped in a crispy toasted tortilla, perfect for busy mornings or meal prep.

- 6 large eggs
- ½ lb breakfast sausage
- 1 cup shredded cheddar cheese
- 6 medium flour tortillas
- 1 tablespoon butter (for toasting)
- Salt & pepper to taste
- Optional: chopped parsley, hot sauce
Instructions
- Cook the breakfast sausage in a skillet until browned. Drain excess grease and set aside.
- Whisk the eggs with salt and pepper in a bowl. Scramble the eggs in the same skillet until cooked but still soft. Remove from heat.
- Warm the tortillas slightly to make them pliable.
- Assemble the roll-ups: In each tortilla, place a portion of scrambled eggs, cooked sausage, and a sprinkle of cheese.
- Roll each tortilla up tightly, folding in the sides like a burrito.
- Melt butter in a clean skillet over medium heat. Place the roll-ups seam-side down and cook for 2–3 minutes per side until golden and crispy.
- Slice and serve warm, or let cool and wrap for later.
Notes
- Warm tortillas before rolling to prevent tearing.
- Do not overfill the tortillas.
- Cook seam-side down first to help seal the wrap.
- Wrap leftovers in foil or parchment for grab-and-go.
- Freeze individually for the week ahead.
- Store in an airtight container in the fridge for 3–4 days.
- Freeze wrapped in foil for up to 2 months.
- Reheat in the microwave for 1–2 minutes or toast in a skillet/oven for crispiness.
- For a vegetarian option, use meatless sausage, sautéed vegetables, or tofu scramble.
- To prevent sogginess, let them cool slightly before storing and reheat uncovered.
