Instructions
- Make hard caramel using a stovetop method. Let it cool completely before chopping into small pieces.
- Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
- In an electric mixer, cream together the packed light brown sugar, granulated sugar, unsalted butter, and real vanilla extract until light and fluffy, about 2-3 minutes.
- Incorporate the large eggs one at a time, mixing thoroughly after each addition.
- Add the baking powder, baking soda, and sea salt to the wet mixture, mixing just until combined.
- Slowly add the all-purpose flour until fully combined, then fold in the dark chocolate and caramel pieces.
- Use a cookie scoop to portion out 2-tablespoon balls of dough on the lined cookie sheet, spacing evenly.
- Bake for about 11 minutes.
- As soon as they come out of the oven, sprinkle with sea salt flakes, if using.
