Description

A delicious and nutritious frittata featuring roasted sweet potatoes, kale, and goat cheese, perfect for any meal of the day.


Ingredients

  • 3 teaspoons avocado or olive oil, divided
  • 1/2 cup red onion, sliced or chopped
  • 1 clove garlic, minced
  • 1 1/2 cups de-stemmed kale, chopped
  • 1 tablespoon fresh thyme, plus more for topping
  • 8 eggs
  • 1/4 teaspoon sea salt
  • 2 ounces goat cheese
  • 2 cups sweet potatoes, chopped into bite-size pieces
  • Hot sauce, for topping

Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 teaspoon oil, salt, and roast for 25-30 minutes.
  2. In a skillet, heat remaining oil over medium heat. Sauté onion for 5 minutes, add garlic, and cook for 1 minute.
  3. Add kale and thyme to the skillet, cook until kale is wilted.
  4. In a bowl, whisk eggs and season with salt. Pour egg mixture into the skillet.
  5. Add roasted sweet potatoes and goat cheese, stir gently. Cook for 5 minutes on medium heat.
  6. Transfer skillet to oven and bake for 15-20 minutes until set. Top with fresh thyme and serve with hot sauce.
