- 1/4 cup finely chopped green onions (scallions), white and light green parts only
- 2 tablespoons Worcestershire sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon kosher salt
- 1 cup finely chopped pecans, walnuts, or a mix (optional coating)
- 2 small pretzel twists or pretzel sticks (for antlers)
- 2 small black olive halves or 2 black peppercorns (for eyes)
- 1 small piece of red bell pepper, pimento, or sun-dried tomato (for nose)
- 2 small crackers, almond slivers, or sliced almonds (for ears)
Instructions
- Ensure cream cheese is at room temperature (1-2 hours out of fridge). Shred sharp cheddar and Monterey Jack cheeses. Finely chop red bell pepper and green onions.
- In a large bowl, beat softened cream cheese until light and fluffy (1-2 minutes). Add Worcestershire sauce, garlic powder, onion powder, black pepper, and salt; beat until fully incorporated. Scrape down bowl sides.
- Add shredded cheddar and Monterey Jack cheeses, finely chopped red bell pepper, and green onions. Mix on low speed or with a spatula until just combined. Do not overmix. Taste and adjust seasonings as desired.
- Scrape the cheese mixture onto a large piece of plastic wrap. Using the wrap, shape the mixture into an oval or slightly teardrop shape for the reindeer’s head. Gently pull a small portion from the front-bottom to form a distinct, slightly protruding snout.
- Tightly wrap the shaped cheese ball in plastic wrap. Refrigerate for at least 2-3 hours, or preferably overnight, until firm. This is essential for handling and decorating.
- Once thoroughly chilled and firm, unwrap the cheese ball. Spread finely chopped nuts on a plate. Gently roll and press the cheese ball into the nuts until completely coated, including the snout. Pat nuts onto any bare spots.
- Transfer the cheese ball to a serving platter. Gently insert two small pretzel twists or sticks into the top-back for antlers. Press two black olive halves or peppercorns onto the upper front for eyes. Shape a small piece of red bell pepper, pimento, or sun-dried tomato into a nose and press onto the snout tip. Insert two small crackers, almond slivers, or sliced almonds just behind the eyes for ears.
