Description

A refreshing salad combining shrimp and cucumbers with a creamy lime dressing, perfect for warm weather dining.


Ingredients

  • 2 pounds shrimp, peeled and deveined
  • 1 English cucumber, small diced
  • 3 green onions, thinly sliced
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • 1 large lime, zested and juiced
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, minced
  • ¼ teaspoon kosher salt

Instructions

  1. In a medium pot, bring salted water to a boil and cook shrimp for 2-3 minutes until pink. Drain and cool.
  2. Dice cucumber and slice green onions. Combine in a large bowl.
  3. For the dressing, mix mayonnaise, sour cream, lime zest, lime juice, dill, mustard, garlic, and salt until smooth.
  4. Add cooled shrimp to the bowl with vegetables. Pour dressing over and mix gently.
  5. Chill in the refrigerator for at least 30 minutes before serving.
