A refreshing salad combining shrimp and cucumbers with a creamy lime dressing, perfect for warm weather dining.

- 2 pounds shrimp, peeled and deveined
- 1 English cucumber, small diced
- 3 green onions, thinly sliced
- ⅓ cup mayonnaise
- ⅓ cup sour cream
- 1 large lime, zested and juiced
- 2 tablespoons chopped fresh dill
- 1 tablespoon Dijon mustard
- 1 garlic clove, minced
- ¼ teaspoon kosher salt
Instructions
- In a medium pot, bring salted water to a boil and cook shrimp for 2-3 minutes until pink. Drain and cool.
- Dice cucumber and slice green onions. Combine in a large bowl.
- For the dressing, mix mayonnaise, sour cream, lime zest, lime juice, dill, mustard, garlic, and salt until smooth.
- Add cooled shrimp to the bowl with vegetables. Pour dressing over and mix gently.
- Chill in the refrigerator for at least 30 minutes before serving.
