Description

This Raspberry Dark Chocolate Banana Bread harmonizes ripe bananas, tart raspberries, and rich dark chocolate for a delectable treat.

Ingredients

Scale
  • 2 cups all-purpose flour (Cake flour can yield a lighter texture.)
  • 1 teaspoon baking soda (Ensure it’s fresh for optimal effect.)
  • 1/2 teaspoon salt (A pinch of sea salt can amplify sweetness.)
  • 1 cup granulated white sugar (Can substitute with brown sugar for a richer taste.)
  • 1/2 cup unsalted butter (Coconut oil works as a dairy-free option.)
  • 2 large eggs (Ensure they are at room temperature for even mixing.)
  • 3 medium mashed ripe bananas (About 3 medium bananas is ideal.)
  • 1/2 cup plain low-fat yogurt (Greek yogurt is a good substitute for a protein boost.)
  • 1 teaspoon vanilla extract (Using pure vanilla is best for taste.)
  • 1 cup dark chocolate chunks (Milk chocolate can be used for a sweeter flavor.)
  • 1 cup raspberries (Halved and tossed in flour, frozen berries are a delightful alternative.)
  • 1 banana sliced bananas (Layer them on top before baking.)
  • 1/2 cup chopped nuts (Walnuts or pecans complement the bread beautifully.)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan with cooking spray.
  2. Whisk together the flour, baking soda, and salt in a medium bowl until well combined.
  3. Cream sugar and butter in a large bowl using an electric mixer until blended and fluffy.
  4. Add the eggs, one at a time, blending well after each addition. Mix in the mashed bananas, yogurt, and vanilla.
  5. Stir in the flour mixture gradually until just combined, being careful not to over-mix.
  6. Fold in the dark chocolate chunks and gently incorporate the raspberries.
  7. Pour the batter into your prepared loaf pan and bake for 50-60 minutes or until a wooden pick inserted comes out clean.
  8. Cool the bread in the pan for 15 minutes, then transfer it to a wire rack to cool completely.
