Description

Delightful Polar Bear Cookies that are soft, chewy, and perfect for holiday gatherings.


Ingredients

  • 1/2 cup Cream Cheese
  • 1 1/2 cups Granulated Sugar
  • 1 large Egg
  • 2 tsp Vanilla Extract
  • 3 cups All-Purpose Flour
  • 1 Tbsp Cornstarch
  • 1/2 tsp Baking Powder
  • 1/2 tsp Fine Salt
  • 1 cup Unsalted Butter
  • 3 1/2 cups Powdered Sugar
  • 1/4 cup Heavy Whipping Cream
  • 1 cup Coarse Sanding Sugar
  • 30 large Chocolate Chips
  • Sprinkles

Instructions

  1. Beat unsalted butter and cream cheese together in a bowl until smooth and creamy. Gradually add in granulated sugar and mix until light in color, about 3-4 minutes. Incorporate the large egg and vanilla extract until well combined.
  2. In a separate bowl, whisk together all-purpose flour, cornstarch, baking powder, and fine salt. Slowly mix this dry blend into the butter mixture until just combined, ensuring not to overmix.
  3. Divide the dough into two portions, wrap in plastic wrap, and refrigerate for at least 2 hours, or freeze for 30 minutes.
  4. Preheat your oven to 350°F (175°C) while rolling out the chilled dough.
  5. Roll the dough out to a thickness of 1/3 inch. Use a large circle cutter for the cookie body and smaller circles for the ears. Place each set on a baking sheet lined with parchment paper.
  6. Chill the shaped cookies again in the fridge for about 10 minutes, then bake for 12-14 minutes, or until just set without browning the edges.
  7. Transfer the cookies to a wire rack to cool completely.
  8. Beat unsalted butter until smooth, then mix in vanilla extract and a pinch of fine salt. Gradually add powdered sugar, adjusting the texture with heavy whipping cream until it’s spreadable.
  9. Frost each cooled cookie with buttercream, sprinkle with coarse sanding sugar for a snowy effect, add chocolate chips for noses, and use sprinkles for eyes and ears.
