- 1 1/2 cups Granulated Sugar
- 1 large Egg
- 2 tsp Vanilla Extract
- 3 cups All-Purpose Flour

- 1/2 tsp Fine Salt
- 1 cup Unsalted Butter
- 3 1/2 cups Powdered Sugar
- 1/4 cup Heavy Whipping Cream
- 1 cup Coarse Sanding Sugar
- 30 large Chocolate Chips
- Sprinkles
Instructions
- Beat unsalted butter and cream cheese together in a bowl until smooth and creamy. Gradually add in granulated sugar and mix until light in color, about 3-4 minutes. Incorporate the large egg and vanilla extract until well combined.
- In a separate bowl, whisk together all-purpose flour, cornstarch, baking powder, and fine salt. Slowly mix this dry blend into the butter mixture until just combined, ensuring not to overmix.
- Divide the dough into two portions, wrap in plastic wrap, and refrigerate for at least 2 hours, or freeze for 30 minutes.
- Preheat your oven to 350°F (175°C) while rolling out the chilled dough.
- Roll the dough out to a thickness of 1/3 inch. Use a large circle cutter for the cookie body and smaller circles for the ears. Place each set on a baking sheet lined with parchment paper.
- Chill the shaped cookies again in the fridge for about 10 minutes, then bake for 12-14 minutes, or until just set without browning the edges.
- Transfer the cookies to a wire rack to cool completely.
- Beat unsalted butter until smooth, then mix in vanilla extract and a pinch of fine salt. Gradually add powdered sugar, adjusting the texture with heavy whipping cream until it’s spreadable.
- Frost each cooled cookie with buttercream, sprinkle with coarse sanding sugar for a snowy effect, add chocolate chips for noses, and use sprinkles for eyes and ears.
