Description

A savory and tender beef top loin roast encrusted with crushed peppercorns and roasted to perfection. Perfect for an elegant dinner or special occasion.


Ingredients

  • 3 lb beef top loin roast
  • 2 tablespoons mixed peppercorns, coarsely crushed
  • 2 teaspoons kosher salt
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon Dijon mustard
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Preheat the oven to 450°F (232°C). Pat the beef top loin roast dry with paper towels.
  2. Rub the roast all over with olive oil, then coat with Dijon mustard.
  3. Combine crushed peppercorns, kosher salt, minced garlic, rosemary, and black pepper in a bowl. Press the mixture evenly over the roast.
  4. Place the roast on a rack in a roasting pan. Roast in the preheated oven for 15 minutes, then reduce temperature to 325°F (163°C) and continue roasting for 55 minutes, or until desired doneness.
  5. Transfer roast to a cutting board, tent with foil, and let rest for 15 minutes before slicing and serving.
