- 3 lb beef top loin roast
- 2 tablespoons mixed peppercorns, coarsely crushed
- 2 teaspoons kosher salt
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon Dijon mustard
- 1 teaspoon freshly ground black pepper
Instructions
- Preheat the oven to 450°F (232°C). Pat the beef top loin roast dry with paper towels.
- Rub the roast all over with olive oil, then coat with Dijon mustard.
- Combine crushed peppercorns, kosher salt, minced garlic, rosemary, and black pepper in a bowl. Press the mixture evenly over the roast.
- Place the roast on a rack in a roasting pan. Roast in the preheated oven for 15 minutes, then reduce temperature to 325°F (163°C) and continue roasting for 55 minutes, or until desired doneness.
- Transfer roast to a cutting board, tent with foil, and let rest for 15 minutes before slicing and serving.
