Ingredients

  • 1 cup Unsalted butter (cold and cubed)
  • 1 cup Light brown sugar (packed)
  • 1/2 cup Granulated sugar
  • 1 large Egg (room temperature)
  • 1 large Egg yolk
  • 2 teaspoon Vanilla extract
  • 1 cup All-purpose flour
  • 1/2 cup Dutch-processed cocoa powder
  • 1 teaspoon Kosher salt
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1 cup Semi-sweet chocolate chunks
  • 1 cup Milk chocolate chips
  • 1/2 cup Peanut butter chips

Instructions

  1. Preheat your oven to 400°F (204°C). Line two baking sheets with parchment paper.
  2. In a stand mixer, combine cold butter, light brown sugar, and granulated sugar. Beat until creamy.
  3. Add the large egg and egg yolk to the mixture. Mix until fully combined and smooth.
  4. Pour in the vanilla extract and mix, scraping down the sides as needed.
  5. In a separate bowl, whisk together flour, cocoa powder, salt, baking powder, and baking soda.
  6. Gradually add the dry ingredients to the wet mixture, mixing until mostly incorporated.
  7. Gently fold in the chocolate chunks, milk chocolate chips, and peanut butter chips.
  8. Shape the dough into 8 large balls and place on the baking sheets, flattening slightly.
  9. Bake for 12-13 minutes until the edges are set and the tops show slight cracks.
  10. Allow cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack.
