- 1 cup Unsalted butter (cold and cubed)
- 1 cup Light brown sugar (packed)
- 1/2 cup Granulated sugar
- 1 large Egg (room temperature)
- 1 large Egg yolk
- 2 teaspoon Vanilla extract
- 1 cup All-purpose flour
- 1/2 cup Dutch-processed cocoa powder
- 1 teaspoon Kosher salt
- 1 teaspoon Baking powder
- 1 teaspoon Baking soda
- 1 cup Semi-sweet chocolate chunks
- 1 cup Milk chocolate chips
- 1/2 cup Peanut butter chips
Instructions
- Preheat your oven to 400°F (204°C). Line two baking sheets with parchment paper.
- In a stand mixer, combine cold butter, light brown sugar, and granulated sugar. Beat until creamy.
- Add the large egg and egg yolk to the mixture. Mix until fully combined and smooth.
- Pour in the vanilla extract and mix, scraping down the sides as needed.
- In a separate bowl, whisk together flour, cocoa powder, salt, baking powder, and baking soda.
- Gradually add the dry ingredients to the wet mixture, mixing until mostly incorporated.
- Gently fold in the chocolate chunks, milk chocolate chips, and peanut butter chips.
- Shape the dough into 8 large balls and place on the baking sheets, flattening slightly.
- Bake for 12-13 minutes until the edges are set and the tops show slight cracks.
- Allow cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack.
