Delicious Pasta Salad Cups Recipe for Effortless Entertaining


Ingredients

  • 8 ounces Rotini Pasta (Cook until al dente)
  • 1 cup Cucumbers (Chopped, seedless preferred)
  • 1 cup Cherry Tomatoes (Halved)
  • 1/2 cup Olives (Pitted and sliced)
  • 1/4 cup Fresh Parsley (Chopped)
  • 1/2 cup Italian Dressing (Or Greek vinaigrette)
  • to taste Salt
  • to taste Black Pepper

Instructions

  1. Bring a pot of salted water to a boil and add the rotini pasta. Cook until al dente, about 8-10 minutes. Drain and rinse under cold water to cool.
  2. While the pasta cools, chop the cucumbers into bite-sized chunks, halve the cherry tomatoes, and slice the olives if they’re whole. Chop the fresh parsley finely.
  3. In a large mixing bowl, combine the cooled pasta, chopped cucumbers, halved tomatoes, sliced olives, and parsley. Drizzle with the Italian dressing and toss gently.
  4. Adjust the flavors with salt and pepper, or more dressing if desired.
  5. Using a spoon, scoop the mixture into small cups, distributing the ingredients evenly.
  6. Cover the cups and refrigerate for at least 30 minutes before serving.
