- 1 head Iceberg lettuce (broken into quarters)
- 1 head Romaine lettuce (chopped)
- 1 cup Red onion (sliced)
- 1 cup Diced pimentos
- 1 cup Artichoke hearts (chopped)
- 1/2 cup Grated Parmesan cheese
- 1/2 cup Vegetable oil
- 1/4 cup Olive oil
- 1/4 cup Red wine vinegar
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
Instructions
- Break the iceberg lettuce into quarters and separate the leaves gently, discarding any wilted outer layers.
- Combine the iceberg lettuce, romaine lettuce, sliced red onion, diced pimentos, artichoke hearts, and grated Parmesan cheese in a large bowl.
- Toss the ingredients lightly until they’re well mixed, then chill the salad in the fridge for about 10 minutes.
- Mix the vegetable oil, olive oil, red wine vinegar, and a pinch of salt and pepper to taste in a small bowl.
- Whisk the salad dressing well until it’s emulsified and slightly thickened. Pour the dressing evenly over the chilled salad just before serving.
