Description

Crispy baked zucchini fries coated in Parmesan cheese and herbs. A delicious and healthier alternative to traditional fries, perfect for parties or as a side dish.


Ingredients

  • 2 medium zucchinis
  • 1 cup grated Parmesan cheese
  • 3/4 cup panko breadcrumbs
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried Italian herbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Cooking spray

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly coat with cooking spray.
  2. Slice zucchinis into fries about 1/2-inch thick.
  3. In a shallow bowl, whisk the eggs. In another bowl, combine grated Parmesan, panko breadcrumbs, garlic powder, Italian herbs, salt, and pepper.
  4. Dip each zucchini fry first in the egg, then coat evenly in the Parmesan-breadcrumb mixture. Arrange in a single layer on the prepared baking sheet.
  5. Lightly spray zucchini fries with cooking spray. Bake for 22-25 minutes, flipping halfway, until golden and crispy.
  6. Serve warm with your favorite dipping sauce.
