Ingredients

  • 3 cups cornbread crumbs
  • 3 cups crushed croutons
  • 4 ounces Italian sausage
  • 3 tablespoons unsalted butter
  • 1.5 cups small diced yellow onion
  • 0.75 cup small diced green bell pepper
  • 0.75 cup small diced celery
  • 1.5 tablespoons minced fresh sage
  • 1 teaspoon ground sage
  • 0.75 teaspoon dried thyme
  • 3 tablespoons minced fresh Italian parsley
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon Old Bay seasoning
  • 0.5 teaspoon kosher salt
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot sauce
  • 1 large egg
  • 1.75 cups seafood or vegetable stock
  • 8 ounces oysters

Instructions

  1. Preheat your oven to 350°F (175°C) and adjust the rack to the top third of the oven. While it warms up, spray an 8×8 baking dish with nonstick cooking spray.
  2. Combine the cornbread and crushed croutons in a large mixing bowl.
  3. Sauté the Italian sausage in a nonstick skillet over medium-high heat until browned.
  4. Add butter, onion, bell pepper, and celery to the skillet. Cook until the vegetables have softened and turned translucent.
  5. Mix in the fresh and ground sages, thyme, parsley, nutmeg, Old Bay seasoning, and salt. Remove from heat.
  6. Stir in Worcestershire sauce, hot sauce, the egg, and seafood or vegetable stock. Mix until everything is evenly combined.
  7. Fold the oysters gently into the mixture. Pour the dressing into the prepared baking pan.
  8. Bake for about 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool the dressing for 5 minutes after taking it out of the oven.
