Description

Ingredients

  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1/3 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups loop cereal (such as Froot Loops), divided

Instructions

  1. Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs, then whisk in milk, melted butter, and vanilla extract.
  4. Gently fold the wet ingredients into the dry ingredients until just combined. Stir in 1 cup of the loop cereal.
  5. Divide the batter evenly among the muffin cups. Sprinkle the remaining 1/2 cup loop cereal on top of each muffin.
  6. Bake for 20–22 minutes or until a toothpick inserted into the center comes out clean. Cool before serving.
