- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup milk
- 1/3 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 1/2 cups loop cereal (such as Froot Loops), divided
Instructions
- Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, beat the eggs, then whisk in milk, melted butter, and vanilla extract.
- Gently fold the wet ingredients into the dry ingredients until just combined. Stir in 1 cup of the loop cereal.
- Divide the batter evenly among the muffin cups. Sprinkle the remaining 1/2 cup loop cereal on top of each muffin.
- Bake for 20–22 minutes or until a toothpick inserted into the center comes out clean. Cool before serving.
