- 16 oz full-fat cream cheese (softened)
- ½ cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- Jarred caramel sauce
- Chocolate ganache (½ cup chocolate chips & ¼ cup heavy cream)
- Chopped pecans
Instructions
- Preheat oven to 325°F (163°C) and lightly grease a mini muffin tin.
- Combine graham cracker crumbs and melted butter in a mixing bowl until well mixed. Press about one tablespoon of the mixture into each cup of the mini muffin tin.
- Beat the softened cream cheese until smooth using an electric mixer. Add granulated sugar and vanilla extract; mix until well combined. Beat in eggs one at a time until fully incorporated.
- Spoon the cheesecake filling over each crust in the muffin tin, filling them about three-quarters full.
- Bake for about 20 minutes or until set around the edges but slightly jiggly in the center.
- Allow cheesecakes to cool at room temperature before refrigerating for at least four hours.
- Once cooled, drizzle with caramel sauce and chocolate ganache. Top with chopped nuts for added crunch.
