Description

These mini turtle cheesecakes are a delightful dessert that brings together the rich flavors of chocolate, caramel, and nuts with a creamy cheesecake base. Perfect for birthdays, holidays, or just because, these mini treats will impress your guests and satisfy your sweet tooth. Ingredients

  • 1 cup graham cracker crumbs
  • 4 Tbsp unsalted butter (melted)
  • 16 oz full-fat cream cheese (softened)
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • Jarred caramel sauce
  • Chocolate ganache (½ cup chocolate chips & ¼ cup heavy cream)
  • Chopped pecans

Instructions

  1. Preheat oven to 325°F (163°C) and lightly grease a mini muffin tin.
  2. Combine graham cracker crumbs and melted butter in a mixing bowl until well mixed. Press about one tablespoon of the mixture into each cup of the mini muffin tin.
  3. Beat the softened cream cheese until smooth using an electric mixer. Add granulated sugar and vanilla extract; mix until well combined. Beat in eggs one at a time until fully incorporated.
  4. Spoon the cheesecake filling over each crust in the muffin tin, filling them about three-quarters full.
  5. Bake for about 20 minutes or until set around the edges but slightly jiggly in the center.
  6. Allow cheesecakes to cool at room temperature before refrigerating for at least four hours.
  7. Once cooled, drizzle with caramel sauce and chocolate ganache. Top with chopped nuts for added crunch.
