Description

Ingredients

  • 2 pounds Baby Potatoes
  • 2 tablespoons Olive Oil
  • 1 teaspoon Kosher Salt
  • 1 cup Sour Cream
  • 1/2 cup Bacon Bits
  • 1/4 cup Chives

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Toss baby potatoes in a mixing bowl with olive oil.
  3. Arrange the coated potatoes on a baking sheet and sprinkle with kosher salt.
  4. Bake for 30-35 minutes, shaking the baking pan halfway through.
  5. Cool the potatoes for about 5 minutes and cut a small wedge out of the top of each.
  6. Fill each wedge with sour cream, then sprinkle with bacon bits and finish with chives.
