- 2 pounds Baby Potatoes
- 2 tablespoons Olive Oil
- 1 teaspoon Kosher Salt
- 1 cup Sour Cream
- 1/2 cup Bacon Bits
- 1/4 cup Chives
Instructions
- Preheat the oven to 375°F (190°C).
- Toss baby potatoes in a mixing bowl with olive oil.
- Arrange the coated potatoes on a baking sheet and sprinkle with kosher salt.
- Bake for 30-35 minutes, shaking the baking pan halfway through.
- Cool the potatoes for about 5 minutes and cut a small wedge out of the top of each.
- Fill each wedge with sour cream, then sprinkle with bacon bits and finish with chives.
