Ingredients

  • 1 tablespoon instant coffee
  • 2 tablespoons hot water
  • 1 cup icing sugar
  • 1 stick unsalted butter
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 1 cup melted dark chocolate
  • 1/4 cup chopped pistachios

Instructions

  1. Dissolve 1 tablespoon of instant coffee in 2 tablespoons of hot water; allow to cool.
  2. In a bowl, beat 1 stick of softened unsalted butter with 1 cup of icing sugar until light and fluffy, about 3-5 minutes.
  3. Incorporate 1 large beaten egg into the mixture until combined.
  4. In a separate bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of cornstarch, and 1 teaspoon of ground cinnamon.
  5. Fold in the cooled coffee mixture into the creamed butter, then gradually add the dry ingredients.
  6. Pipe small rosettes onto a lined baking tray.
  7. Freeze the piped cookies for 5-10 minutes.
  8. Preheat the oven to 350°F (175°C) and bake for approximately 8 minutes.
  9. Cool before dipping in melted dark chocolate and sprinkling with chopped pistachios.
