- 1 pound sirloin steak (flank or ribeye can be substituted)
- 2 tablespoons olive oil (avocado oil can be used)
- 3 cloves garlic cloves (can use garlic powder as an alternative)
- 2 tablespoons lemon juice (vinegar can be used as a substitute)
- 1 teaspoon dried oregano (fresh herbs can be used)
- 1 teaspoon dried thyme (fresh herbs can be used)

- 2 cups cooked grains (quinoa or cauliflower rice can be used)
- 1 cup roasted chickpeas (optional)
- 1 cup cherry tomatoes (seasonal vegetables can be used)
- 1 cup cucumber (diced)
- 1 small red onion (finely chopped)
- 1/2 cup kalamata olives (green olives can be used)
- 1/4 cup feta cheese (omit for dairy-free)
- 1/4 cup fresh herbs (parsley or dill for garnish)
- 1 cup Greek yogurt (coconut yogurt or tahini for dairy-free)
- 1/2 cup grated cucumber (squeezed dry)
- 1 tablespoon honey (omit for Whole30)
Instructions
- In a bowl, mix together olive oil, minced garlic, lemon juice, dried oregano, thyme, salt, and pepper. Coat the sirloin steak with the marinade and let it sit for at least 30 minutes.
- In a separate mixing bowl, combine Greek yogurt, grated cucumber, lemon juice, minced garlic, dill, salt, and pepper. Stir until smooth and creamy, then cover and refrigerate to chill.
- Whisk together olive oil, lemon juice, honey (if using), minced garlic, oregano, salt, and pepper for the vinaigrette.
- Heat a skillet over high heat and sear the marinated steak for 4–5 minutes on each side until desired doneness is achieved. Let it rest before slicing thinly.
- In a generous bowl, layer cooked grains, sliced steak, and fresh toppings. Drizzle with tzatziki and vinaigrette.
- Optional: Sprinkle with fresh parsley or dill for extra freshness.
