Description

Quick & Easy Mediterranean Steak Bowl is a vibrant dish that’s perfect for busy weeknights and can be customized to fit various dietary preferences.


Ingredients

  • 1 pound sirloin steak (flank or ribeye can be substituted)
  • 2 tablespoons olive oil (avocado oil can be used)
  • 3 cloves garlic cloves (can use garlic powder as an alternative)
  • 2 tablespoons lemon juice (vinegar can be used as a substitute)
  • 1 teaspoon dried oregano (fresh herbs can be used)
  • 1 teaspoon dried thyme (fresh herbs can be used)
  • to taste salt
  • to taste black pepper
  • 2 cups cooked grains (quinoa or cauliflower rice can be used)
  • 1 cup roasted chickpeas (optional)
  • 1 cup cherry tomatoes (seasonal vegetables can be used)
  • 1 cup cucumber (diced)
  • 1 small red onion (finely chopped)
  • 1/2 cup kalamata olives (green olives can be used)
  • 1/4 cup feta cheese (omit for dairy-free)
  • 1/4 cup fresh herbs (parsley or dill for garnish)
  • 1 cup Greek yogurt (coconut yogurt or tahini for dairy-free)
  • 1/2 cup grated cucumber (squeezed dry)
  • 1 tablespoon honey (omit for Whole30)

Instructions

  1. In a bowl, mix together olive oil, minced garlic, lemon juice, dried oregano, thyme, salt, and pepper. Coat the sirloin steak with the marinade and let it sit for at least 30 minutes.
  2. In a separate mixing bowl, combine Greek yogurt, grated cucumber, lemon juice, minced garlic, dill, salt, and pepper. Stir until smooth and creamy, then cover and refrigerate to chill.
  3. Whisk together olive oil, lemon juice, honey (if using), minced garlic, oregano, salt, and pepper for the vinaigrette.
  4. Heat a skillet over high heat and sear the marinated steak for 4–5 minutes on each side until desired doneness is achieved. Let it rest before slicing thinly.
  5. In a generous bowl, layer cooked grains, sliced steak, and fresh toppings. Drizzle with tzatziki and vinaigrette.
  6. Optional: Sprinkle with fresh parsley or dill for extra freshness.
