Delicious Mediterranean Spinach and Feta Cheese Crisps Recipe


Ingredients

  • 2 cups Fresh Spinach (Chopped and well-drained)
  • 1 cup Feta Cheese (Crumbled)
  • 1 cup Mozzarella Cheese (Shredded)
  • 1 large Egg (Can substitute with a flax egg for vegans)
  • 1 teaspoon Garlic Powder
  • to taste Salt
  • to taste Pepper
  • optional Herbs/Spices (Such as basil or red pepper flakes)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse and chop the spinach into fine pieces and ensure it’s well-drained.
  3. In a large mixing bowl, combine spinach, feta, mozzarella, egg, garlic powder, salt, pepper, and herbs/spices. Mix well.
  4. Drop spoonfuls of the mixture onto a lined baking sheet, spacing them about 2 inches apart.
  5. Bake for 8-10 minutes until edges are golden brown and crispy.
  6. Let crisps cool for a few minutes, then transfer to a wire rack.
