Description

An easy Mediterranean Pasta & Kale Salad with Garlic Basil, full of vibrant flavors and perfect for any gathering.


Ingredients

Scale
  • 2 cups pasta (Choose your favorite type; whole grain or gluten-free make excellent alternatives.)
  • 4 cups kale (Can be replaced with spinach for a softer bite.)
  • 1 cup sun-dried tomatoes (Fresh tomatoes or roasted red peppers can be substitutes.)
  • 1/2 cup shredded Parmesan cheese (Nutritional yeast can be used for a dairy-free option.)
  • 1/2 cup crumbled feta cheese (Can be replaced with ricotta or omitted for a vegan version.)
  • 1/4 cup fresh basil (Can be swapped for parsley or oregano.)
  • 1/3 cup extra virgin olive oil (Avocado oil can be used for a neutral flavor.)
  • 3 tablespoons white wine vinegar (Red wine vinegar or apple cider vinegar are alternatives.)
  • 2 cloves fresh garlic (Roasted garlic can be used for a milder taste.)

Instructions

  1. Cook Pasta: Bring a large pot of salted water to a rolling boil. Add your pasta and cook it according to the package instructions until al dente. Once cooked, drain and let it cool slightly.
  2. Make Dressing: In a food processor or blender, combine the fresh basil, extra virgin olive oil, white wine vinegar, garlic, salt, and pepper. Blend until smooth, then refrigerate the dressing until you’re ready to use it.
  3. Mix Salad: Take the kale and massage it gently with a little olive oil until the leaves soften. In a large bowl, combine the kale, cooled pasta, sun-dried tomatoes, feta cheese, and shredded Parmesan.
  4. Combine and Chill: Drizzle the zesty dressing over the salad mixture. Toss everything gently to combine. Cover the bowl and let it chill in the refrigerator for at least one hour.
