Description

Mediterranean Chicken Wraps are a quick, healthy meal, bursting with vibrant flavors and customizable options.


Ingredients

  • 1 pound Boneless, Skinless Chicken Breasts (Can substitute with chicken thighs.)
  • 2 tablespoons Olive Oil (Extra virgin is preferred.)
  • 1 teaspoon Dried Oregano (Fresh oregano can be used.)
  • 1 teaspoon Ground Cumin (Coriander can be used as an alternative.)
  • 2 cloves Garlic (minced) (Fresh garlic is preferred.)
  • to taste Salt
  • to taste Pepper
  • 4 large Whole Wheat Tortillas (Can be swapped with lettuce wraps.)
  • 1 cup Cherry Tomatoes (Other tomato types can work if diced similarly.)
  • 1 cup Cucumber (diced) (Zucchini is a great alternative.)
  • 1/2 medium Red Onion (thinly sliced) (Sweet onions can be used.)
  • 1/2 cup Feta Cheese (crumbled) (Goat cheese can be used.)
  • 1/2 cup Kalamata Olives (sliced) (Black olives can be used.)
  • 1/2 cup Hummus (Tzatziki can be used.)
  • 2 cups Mixed Greens (spinach/arugula) (Any leafy greens can be used.)
  • 1 tablespoon Juice of 1 Lemon (Lime juice can also be used.)

Instructions

  1. Preheat your grill or stovetop pan to medium-high heat.
  2. Mix together the olive oil, dried oregano, ground cumin, minced garlic, salt, and pepper in a bowl.
  3. Coat the chicken breasts generously with the marinade and let them marinate for at least 15 minutes.
  4. Grill the chicken for 6-7 minutes on each side or until the internal temperature reaches 165°F.
  5. Prepare your whole wheat tortillas on a clean surface, optionally warming them for better flexibility.
  6. Layer the grilled chicken, diced tomatoes, cucumber, red onion, crumbled feta, sliced olives, and mixed greens onto each tortilla.
  7. Squeeze fresh lemon juice over the filling before rolling the wraps up tightly.
  8. Slice the wraps diagonally for an appealing presentation and serve immediately.
