Instructions
- In a mixing bowl, whisk together cake flour, baking soda, baking powder, and kosher salt until well combined.
- In a separate bowl, beat the unsalted butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Add the sour cream, large eggs, vanilla extract, and almond extract to the butter mixture. Mix well until combined.
- Gradually add the dry flour mixture to the wet ingredients, stirring until a soft, cohesive dough forms.
- Divide the dough in half, wrap in plastic wrap, and refrigerate for at least 3 hours.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- On a floured surface, roll out the chilled dough to about 1/2-inch thickness. Use a 3-inch round cookie cutter to cut out shapes.
- Place the cookies in the preheated oven and bake for 8-9 minutes, or until the edges are just light golden brown.
- Remove the cookies from the oven and transfer them to a wire rack. Let them cool completely before frosting.
- Beat the softened salted butter until fluffy, then gradually mix in powdered sugar, milk, and extracts until smooth.
- Generously pipe frosting onto each cooled cookie and sprinkle with purple, green, and gold sprinkles.
