- 1 pound fettuccine pasta
- 1 tablespoon olive oil
- 1 pound salmon fillets, skin removed and cut into 1-inch pieces
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cloves garlic, minced
- 1/4 cup dry white wine or chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh dill, chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
Instructions
- Cook fettuccine pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
- While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Season salmon pieces with salt and pepper.
- Add salmon to the skillet and cook for 2-3 minutes per side, until cooked through and flaky. Remove salmon from skillet and set aside.
- Add minced garlic to the skillet and cook for about 30 seconds until fragrant.
- Pour in white wine or chicken broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 1 minute.
- Stir in heavy cream and Parmesan cheese. Bring to a gentle simmer and cook for 2-3 minutes, until the sauce thickens slightly.
- Add cooked fettuccine, reserved salmon, chopped dill, lemon juice, and lemon zest to the skillet. Toss to combine and coat everything in the creamy sauce. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
- Serve the Lemon Dill Salmon Pasta immediately, garnished with extra dill and lemon zest if desired.
Notes
- For a lighter version, you can use half-and-half instead of heavy cream.
- Gluten-free pasta can be substituted for fettuccine.
- Adjust the amount of lemon juice and dill to your preference.
