Description

Moist and hearty pumpkin muffins made with Kodiak Cakes whole grain pancake mix, perfect for a cozy breakfast or snack.


Ingredients

  • 2 cups Kodiak Cakes Power Cakes mix
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1/3 cup unsweetened almond milk
  • 1/4 cup melted coconut oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners or lightly grease.
  2. In a large bowl, whisk together the Kodiak Cakes mix, cinnamon, nutmeg, baking powder, and salt.
  3. In another bowl, mix the pumpkin puree, eggs, maple syrup, almond milk, melted coconut oil, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just mixed. Do not overmix.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Cool for 5 minutes in the pan, then transfer to a wire rack.
