  • 1 tsp fresh thyme, chopped
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Prepare Beef Tenderloin: Trim any excess silver skin and fat from the beef tenderloin. Pat it dry with paper towels.
  2. Create Herb Rub: In a small bowl, mix olive oil, garlic powder, salt, black pepper, dried rosemary, and dried sage. Rub this mixture on the beef tenderloin.
  3. Sear for Flavor and Color: Heat a skillet over medium-high heat with olive oil. Sear the beef tenderloin for 2-3 minutes on each side until golden-brown.
  4. Prepare Slow Cooker Base: Pour beef broth into the bottom of the slow cooker.
  5. Transfer to Slow Cooker: Place the seared beef tenderloin into the beef broth in the slow cooker.
  6. Slow Cook to Perfection: Cover and cook on low for 2.5 to 3.5 hours or on high for 1.5 to 2.5 hours. Check for doneness with a meat thermometer.
  7. Rest the Tenderloin: Remove the beef from the slow cooker and let it rest for 10-15 minutes, tented with foil.
  8. Prepare the Sauce Base: Pour the cooking liquid from the slow cooker through a sieve into a saucepan. Skim off excess fat.
  9. Build the Creamy Dijon and Herb Sauce: Heat the strained liquid, melt butter, and add flour to create a roux. Whisk in the liquid and broth, then add cream and mustard.
  10. Finish the Sauce: Stir in fresh thyme and parsley. Adjust seasoning with salt and pepper.
  11. Slice and Serve: Slice the beef against the grain into ½-inch thick medallions. Serve with the sauce over the beef.
