- 1 pound Italian sausage or ground beef
- 1 onion, diced
- 1 ½ teaspoons Italian seasoning
- ½ teaspoon garlic powder
- 1 carrot, chopped
- 3 cups beef or chicken broth
- 15 ounces canned diced tomatoes (with juices)
- 15 ounces canned cannellini beans, drained and rinsed
- 2 tablespoons tomato paste
- 1 bay leaf
- Parmesan cheese and parsley for garnish (optional)
Instructions
- In a large pot, brown the sausage and onion over medium heat until no pink remains. Drain any excess fat.
- Add Italian seasoning, garlic powder, chopped carrot, broth, diced tomatoes (with juice), cannellini beans, tomato paste, and bay leaf.
- Bring the mixture to a boil, then reduce heat to low.
- Simmer for 15 minutes, or until the carrots are tender and the flavors have blended.
- Remove and discard the bay leaf.
- Serve hot, garnished with parmesan cheese and fresh parsley if desired.
Notes
- This Italian bean soup can be made vegetarian by omitting the sausage and adding extra vegetables.
- For a thicker soup, add more tomato paste or simmer for a longer time.
- Cook pasta separately if adding to the soup to prevent it from becoming mushy during storage.
