  • 1 pound rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell pepper (any color), diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup mozzarella balls (bocconcini), halved
  • 4 ounces salami, thinly sliced and quartered
  • 4 ounces pepperoni, thinly sliced and quartered
  • 1/4 cup fresh parsley, chopped
  • For the Dressing:
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook rotini pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, Kalamata olives, mozzarella balls, salami, and pepperoni.
  3. In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, dried oregano, salt, and black pepper.
  4. Pour the dressing over the pasta and vegetable mixture.
  5. Toss gently to coat all ingredients evenly.
  6. Stir in the chopped fresh parsley.
  7. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
