- 1/2 cup mozzarella balls (bocconcini), halved
- 4 ounces salami, thinly sliced and quartered
- 4 ounces pepperoni, thinly sliced and quartered
- 1/4 cup fresh parsley, chopped
- For the Dressing:
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook rotini pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, Kalamata olives, mozzarella balls, salami, and pepperoni.
- In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, dried oregano, salt, and black pepper.
- Pour the dressing over the pasta and vegetable mixture.
- Toss gently to coat all ingredients evenly.
- Stir in the chopped fresh parsley.
