Ingredients

  • 1 cup buttermilk
  • 1/4 cup butter, melted
  • 1 medium egg
  • 1 tsp bicarbonate of soda
  • 1/2 tsp baking powder
  • 1 tbsp chopped chives
  • 2 tbsp chopped spring onions
  • 1 tbsp chopped fresh dill
  • 1 tsp salt
  • 1 cup grated cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sift flour into a large bowl. Mix in salt, bicarbonate of soda, and baking powder.
  3. In a separate jug, beat the egg. Stir in melted butter and buttermilk.
  4. Pour wet ingredients into dry ingredients. Gently fold together.
  5. Mix in chives, spring onions, dill, and cheddar cheese. Combine into a thick batter.
  6. Grease or line a 12-hole muffin tin. Divide batter evenly.
  7. Bake for 17-20 minutes until golden and a toothpick comes out clean.
  8. Cool slightly before serving or removing from cases.
